- Prepare 1 Monk fillet

Place the fish in a roasting tin. Cut the garlic into thin slivers and push into each slit. Season well with salt and pepper then wrap the parma h am around the fish trying to cover all the flesh. Pour over the red wine and then drizzle with oil.

- Set the oven for 200 degrees before you start đź‘Ť
- Place the monk fillet (cut in smaller pieces depending on the size) on to parma ham and put a slice of butter and chopped chives on top.
- Gently wrap the parma around the fish. I just used 1 slice of ham each but use two if your fillet it bigger
- Place some butter on the pan and briefly cook the wrapped monkfish for about 3 minutes
- Place the vegetables and the monkfish on the tray and put it in the over for 20 min
- Sit back for 20min and it’s done!

This dish is not only appetising but presents beautifully on the plate which makes it Lay out the slices of Parma ham onto a large sheet of clingfilm overlaying the slices slightly to resemble a rectangle.
