Add the tomatoes, tomato sauce, mushrooms and seasonings; bring to a boil. Transfer to a baking dish and top with remaining cup cheese.

- Prepare the pasta according to the packet instructions. Whilst the spaghetti is cooking, heat a medium saucepan up over a medium to high heat.
- Once hot add in the oil liberally to cover the pan. Add the onion and chicken pieces and fry for a couple of minutes until the chicken is browned at the edges. Add the chorizo and spray in more oil, allow the natural oils to come out and stir. Turn the heat down to medium low.
- Add the tomato paste, season with salt and pepper. Add in the chilli and crushed garlic. Fry until fragrant. Add in a between 6-8 tbsp of the pasta cooking water to create a glossy sauce that just covers the ingredients. Remove from the heat once it's thickened a little.
- Once the pasta is cooked, drain then add it in with the sauce. Toss together to coat the strands of spaghetti evenly in the sauce. Grate over the cheese then serve up and enjoy. :)
