Fry the cauliflower until golden. remove and set aside. Place a flat, cast-iron, Indian-style tava over a medium-high heat. Stir in all the spices, season, and cook for a few minutes. Drain and add the chickpeas, then the spinach. Cook, stirring, until the spinach wilts.
