- Take 1 full garlic
- Take 1 tsp dhaniya/coriander powder
- Prepare 1/2 tsp jeera/cumin powder
- Make ready 1 tsp chilli powder
- Prepare 2-3 drops oil

- Take 1 tbsp ghee
- Get 25 grams butter
- Make ready 1/2 tsp turmeric

Hyderabadi Mutton Dum Biryani is one of the most loved rice dish across the country among non-vegetarians. Mutton dum biryani recipe is not very difficult to cook but it requires a bit of time to. In a deep bottomed pan add oil. In dum biryani, the meat is half cooked; the dish is brought to perfection through the dum pukth style of cooking.
Instructions to make Mutton dum biryani:
- Clean the mutton. Marinate with curd, lemon, salt, turmeric, papaya peel for one hour.
- Clean the rice. Soak for one hour in 1:1 ratio.
- Cut onions, green chillies, coriander, mint. Peel ginger and garlic.
- Blend together half of all the spices, including: black cumin, bay leaf, star anise, cloves, mace, cinnamon, cardamom. Also blend the ginger and garlic.
- Add the mixture, dhaniya/coriander powder, jeera/cumin powder, chilli powder to the mutton. Also add 1/2 of the mint and coriander. Taste.
- Add the other half of the spices (bay leaf, star anise, shah jeera, cinnamon bark, cardamom, mace, cloves) to the rice, add 1/3 of the mint and coriander. Add 1/2 tbsp rock salt and 3-4 drops of oil.
- Put in the mutton too cook on sim for 2 whistles. Cook the rice on sim for 2 whistles.
- Deep fry the onions until brown.
- Get the rice and mutton off the flame. Let the pressure release. Taste the mutton. Adjust. Check the consistency of both, if underdone, cook them for another whistle. At the end, the mutton should have 3/4th the tenderness you want for it as the rest of the 1/4 th gets cooked in the next step.
- Coat the cooker with ghee. Put in the mutton. sprinkle some herbs.
- Add half the rice. Sprinkle herbs. Add the rest of the rice. Sprinkle the rest of the herbs. Add the onions.
- Mix 1/2 tsp turmeric and 1 tsp oil. Add it to the rice. Add some butter chunks.
- Heat a pan. Place the cooker on too. Cook on low flame for 45 minutes.
