- Cook the rice till fully done but not mushy
- Heat a pan with oil on a medium to low flame. When it turns hot, add peanuts/ cashews. Fry until half done. Add chana dal and urad dal. Fry until the dals turn golden.
- Add mustard & allow to crackle. Next add ginger (Optional), chillies and curry leaves. Add asafoetida(hing) and turmeric.
- Optional :soften the roasted dals. Pour 1 to 2 tbsp water into it the hot seasoning. It will evaporate very quickly and soften the dal.
- Mix everything well along with the dals. Keep the rice covered for 20 to 25 mins.
- Serve lemon rice with plain yogurt, papad,pickle or coconut chutney.
Stir in the rice, butter, lemon zest, garlic and salt; cover and remove from the heat. Stir in the parsley, pimientos and pepper.
